It’s official: if you’re looking to make a dessert that involves minimum effort but has maximum impact, this is it. It is the easiest recipe I have ever made! It was an enormous hit at the office – even the carb-a-phobics devoured a big piece and wanted more.
To someone who only has an ancient hand mixer and never remembers to let the butter soften, any recipe that doesn’t require creaming butter automatically earns some brownie points. Plus, you need only one bowl to make this recipe and there’s no need for sifters, double boilers, rolling pins, or any special equipment or special ingredients.
The texture of these were divine – a crisp, crackly outer crust gave way to a moist and fudgy interior that had such a rich butterscotch flavour and was bursting with chocolate and peanut butter. These were the kind of blondies I dream of: gooey but not oily, soft but still chewy. The chocolate and peanut butter chips stayed melted even after being out of the oven for hours.
I used semisweet chocolate chips, white chocolate chips, and peanut butter chips, but you can use whatever and however many mix-ins you would like! Some ideas I would like to try in the future include Smarties or M&M’s, chopped Reese’s Peanut Butter Cups, and crystallized ginger. Although the blondies serve as a flavourful base, the point of these is to stuff them silly with a variety of different flavours. I was worried that they would be too sweet, but the sweetness wasn’t overwhelming at all.
The original recipe can be found HERE. I baked my blondies for 30 minutes before they were done. The crust stays crisp and the interior stays moist the next day even when cut up and stored in an airtight container. They are the perfect thing to make when you’re invited to a party at the last minute. You can mix them up in mere minutes, let them bake while you get ready, let them cool while you get to the party, and cut them and serve once you get there! Besides, who could resist these?
Loaded Triple Chip Blondies
1/2 cup unsalted butter, melted
3/4 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup all-purpose flour
1+1/3 cups baking chips or candies
- Preheat oven to 350°F. Line an 8-x-8-inch baking pan with foil and spray with nonstick spray.
- Melt the butter and place into a large bowl. Add brown and granulated sugar and beat together. Add egg and vanilla and beat until incorporated.
- Add salt and baking soda to the mixture and mix. Finally add flour and stir until just incorporated (don’t over-mix).
- Fold in baking chips of your choice and pour into prepared baking pan. Smooth out batter and distribute evenly in baking pan. Sprinkle with additional baking chips if desired. Place in the oven and bake for 25 to 30 minutes or until top is golden brown and a toothpick inserted into the middle comes out clean. Let bars cool for 20-30 minutes before cutting.
